The main advantage of fluorescent lighting is that it produces light without shadows, as it is capable of lighting large areas efficiently. Many kitchens have light colored surfaces and plenty of windows, allowing in lots of natural light in the daytime. But since kitchens are busy even before dawn and late into the night, fluorescent lighting can do a good job of providing illumination that is both pleasing and efficient, by filling all the space with ambient light.
